Description

Bacon, egg and cheese scones. Great for breakfast on the go! You could also use diced ham instead of bacon for a lower fat version.

Ingredients

  • 5 slices Bacon, Cooked Crisp, Chopped
  • 3 whole Eggs, Scrambled
  • 1 cup Cheese, Grated, Divided
  • 2 cups Flour
  • 4 teaspoons Baking Powder
  • ¼ cups Butter
  • 1 whole Egg, Uncooked
  • ¾ cups Milk, Plus Extra For Brushing Tops

Preparation

Combine flour and baking powder in a large bowl. Using a pastry blender or a fork, cut in butter until crumbly. Add scrambled eggs, chopped bacon and a little over half of the cheese. Stir together. Beat the uncooked egg with the milk and add it to the dry ingredients. Mix until it forms a dough. Turn it onto a floured surface and knead a few times. Form into 8 even, slightly flattened, balls and place on a cookie sheet. Brush each with milk and sprinkle with remaining cheese. Bake at 400F for 10-12 minutes.
