Description

Bananas, chocolate and the mild flavor of peanut butter combine to make the trifecta of flavor in these muffins. Perfect for a chilly morning. Don’t blame me if you come back for seconds. Or thirds. Not that it happened to me, of course.

Ingredients

  • 2 whole Eggs
  • 1 cup Granulated Sugar
  • ½ cups Canola Oil
  • 1-½ cup Flour, All Purpose
  • ½ cups Peanut Flour (Deffatted Peanuts)
  • ½ teaspoons Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ cups Water
  • 2 whole Large Bananas, Mashed
  • 1 teaspoon Vanilla Extract
  • ½ cups Chocolate Chips, Mini Are Best

Preparation

Mix together the eggs and sugar until light; mix in oil.

In a small bowl, stir dry ingredients together; add to the egg mixture.

Add water, bananas, and vanilla; mix well. Batter will not be thick.

Stir in chocolate chips.

Line 18 muffin tins with paper liners, or spray with non-stick cooking spray. Fill 2/3 full of batter.

Bake at 350F for 20-25 minutes, until golden brown.
