Description

A friend shared this recipe with me years ago. It’s one of my favorites. I love it from the batter to the crumbs stuck on the liners—every piece, every bite. I pretend they are healthy because they are made with fresh apples.

Ingredients

  • FOR THE MUFFIN BATTER:
  • 1-½ cup Flour
  • 1 whole Egg
  • ¾ cups Sugar
  • ½ cups Milk
  • 1-¾ teaspoon Baking Powder
  • ½ teaspoons Salt
  • ½ cups Vegetable Oil
  • 1 cup Unpeeled Apples, Chopped Into Small Cubes
  • ¾ cups Pecans, Chopped
  • _____
  • FOR THE TOPPING:
  • ½ cups Sugar
  • 1 Tablespoon Cinnamon
  • ½ cups Butter, Melted

Preparation

1. Mix all the muffin batter ingredients in a bowl. Evenly divide batter among 12 lined muffin cups. Batter will be thick and chunky.
2. Bake for 20 minutes at 350 degrees.
3. Mix the sugar and cinnamon for the topping in one dish, and melt butter in a second dish.
4. Once muffins have cooled enough to touch, dip the tops in butter, and then in the sugar and cinnamon mix.

Makes 12 muffins.

Super yummy! Omitted the nuts, we’re just not a nutty family. Added some cinnamon. A very quick and easy but special breakfast for my kids. Love!

Good recipe! I didn’t use the topping and kept the nuts out, but they’re now sitting on my counter waiting to be eaten for breakfast (plus a few frozen for later…)

This was a pretty good recipe. I threw some cinnamon and nutmeg in the batter, walnuts instead of pecans, baked for 35 mins. I actually thought they were good enough they didn’t need the topping! But I put some on anyway; I cut the topping ingredients by 1/4th, and it was perfect for me.

I made these this morning for my daycare kids… with a few substitutions. I subbed cinnamon applesauce for the oil, added 1 tsp cinnamon to the flour and omitted the topping entirely. I ended up getting 11 muffins that the kids really enjoyed. I found them a bit to sweet, so will likely cut back the sugar a bit in the future.

Great recipe. I reduced the sugar to 1/2 c, and added 1 t of cinnamon. I omitted the sugar top.
It was delicious! Really moist, and fluffy.
