Quick and easy, watching these light and fluffy biscuits rise while they’re baking is a pure joy!
Preheat oven to 450ºF. Melt butter into a baking pan.
In a bowl, mix together baking mix and Greek yogurt until just combined. Don’t use your mixer, simply use a fork, spoon or even easier: your fingers. The dough should be soft and sticky.
Stir 7-up into dough. Don’t worry if dough is very soft, that’s how it should be.
Sprinkle counter with baking mix and turn the dough out onto counter. Knead and fold dough until it is coated with baking mix.
Pat dough out until about ½ in inch thick and cut biscuits (yields about 15). Bake for 12–15 minutes, or until biscuits are golden brown.
