Description

Easy to pull together with really common ingredients. Perfect afternoon snack, appetizer or party dip.

Ingredients

  • 2 Tablespoons Butter
  • ½ whole Small Onion, Diced
  • 2 cloves Garlic, Minced
  • 1 can (15 Oz. Size) Black Beans, Rinsed And Drained
  • Salt And Pepper, To Taste (I Like A Lot Of Pepper)
  • 1-½ teaspoon Cumin
  • 1 teaspoon Chili Powder
  • ½ cups Hot Salsa (Feel Free To Use Medium Or Mild Salsa, Your Preference)
  • 1 cup Grated Cheddar Cheese
  • ¼ cups Heavy Cream
  • ¼ cups Chopped Cilantro
  • Tortilla Chips, To Serve

Preparation

Preheat a large skillet over medium heat. Melt butter. Saute onions and garlic together for 3 minutes or until softened and slightly browned. Stir in black beans, salt, pepper, cumin and chili powder and cook another 5 minutes or so over medium low heat. Stir in salsa, cheese and cream. Using a potato masher, mash beans until desired consistency is reached. Stir in cilantro. Spoon into a bowl and serve warm with tortilla chips.

Super tasty treat and very easy to make. I didn’t have any cilantro on hand so I left it out and honestly didn’t miss it.
