Description

Easy to make, easy to eat, requires no cooking and is good for you!

Ingredients

  • 1 can (15 Oz. Size) Black Beans, Rinsed And Drained
  • 1 cup Light Sour Cream
  • 1 cup Good Quality Jarred Salsa (I Use Southwest)
  • 1-½ cup Grated Cheddar Cheese
  • 2 whole Roma Tomatoes, Diced
  • 1 whole Large Hass Avocado
  • 1 whole Lime, Juiced
  • 1 whole Scallion, Chopped (green And White Parts)
  • ½ cups Green Bell Pepper, Diced
  • ½ cups Cilantro, Chopped

Preparation

1. Open can of black beans, rinse and drain well. Pour beans onto serving platter and mash coarsely with fork. Spread beans evenly over entire platter.
2. Spread sour cream over top of beans.
3. Spoon salsa by the tablespoon over top of sour cream layer and then spread gently to coat but not mix into the sour cream.
4. Sprinkle grated cheese over top of the salsa layer.
5. Top with diced tomatoes.
6. Cut avocado in half, open and remove pit. Scoop out flesh with large spoon. Dice into small pieces and squeeze lime juice over avocado. Stir lightly to coat all sides with lime juice. Sprinkle pieces over top of the tomatoes.
7. Sprinkle green onions over top of the entire dish.
8. Sprinkle green peppers over top of entire dish.
9. Sprinkle chopped cilantro over top of entire dish.
10. Serve with chips!

I love this appetizer and so do all of my girlfriends. They remark on how fresh it tastes. Also, it can be served with chips or fresh veggies to make it low carb. I recently ate it over a salad with no dressing and it was the bomb.
