Description

Ultra crispy on the outside with the sweet flavor of corn you love on the inside. You’ll be making these all summer long!

Ingredients

  • ½ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • ¼ teaspoons Chili Powder
  • ¼ cups Milk
  • 1 cup Flour
  • 3 cups Corn
  • 1 whole Jalapeno
  • ¼ cups Cilantro
  • 1 Tablespoon Lime Juice
  • ½ cups Baking Powder
  • 2 whole Eggs
  • 2 cups Monterey Jack Cheese

Preparation

In a large bowl, combine corn, cilantro, green onion, jalapeno, and lime juice. Stir in salt, baking powder, pepper, and chili powder. Stir in eggs, milk, and cheese.

Heat oil in a large skillet. Scoop batter into pan using an ice cream scoop. If you want perfectly round fritters, use a mold. Heat for 3–4 minutes per side, pressing down as you go.

Drain on paper towels. Garnish with lime juice, sour cream, and green onions if desired.

This recipe is flawed on many levels:

I followed this recipe to a T. I was hesitant on putting 1/2 cup of baking powder in this, but thought “Why not.” WRONG! It was soo bitter. I wasted $20 on buying extra ingredients for this and it was HORRIBLE.

Krystle, I don’t know if this is a horrible joke, but if not, look at the recipe again and fix it.

1/2 cup of Baking Powder

No mention of when to put in the flour, but this is the least of my worries, as I figured it out.

No mention of how much green onion to use.

No mention of how much oil to use.

I regret doing this recipe. I thought it was going to be good. NOT. Bitter and tasted like Baking Powder
