Description

Little cheesey appetizers to serve with wine or drinks. You can easily switch out the Swiss cheese and do Parmesan.

Ingredients

  • 1 cup Water
  • ½ cups Butter
  • ¼ teaspoons Salt
  • 1 cup Flour
  • 4 whole Eggs
  • ⅓ cups Shredded Swiss Cheese
  • ½ teaspoons Dill

Preparation

Combine water, butter and salt in a medium saucepan and bring to a boil. Add flour to the pan and stir rapidly. Continue cooking and stirring until mixture forms a ball. Remove from heat and let cool for 10-15 minutes.

Add each egg individually, stirring to combine thoroughly before adding the next egg. Mix in the cheese and herb. Preheat oven to 400 degrees F and grease cookie sheets.

Drop tablespoons of dough onto greased cookie sheets, or transfer dough to a pastry bag and pipe mounds onto sheets. Bake puffs in a 400-degree oven for 35 minutes, or until the tops are golden. Gently press a few puffs with your fingers to check that puffs no longer have raw dough and are dry to the touch.

Remove cookie sheets from the oven, transfer puffs to wire racks to cool, and serve warm.

I have to admit, I was a little worried about this one, since I am not a great baker, but it came together easily, although I did have to adjust the cooking time, as they ended up done and browned in less than 35 minutes.

They bake up light and airy and very flavorful. I did top them with a little salt and parmesan before baking.

I also had a lot more dough than I thought I would, making almost 48 1″ puffs with a piping bag. I thought I would have quite a few left over, but every last one was devoured!
