A hearty soup with all the flavors you love! Almost a meal in itself…just add some crusty fresh bread and you’re set!
In a large pot, melt 1 tablespoon butter or margarine over medium heat. Then cook and stir vegetables and beef until beef is brown and veggies are tender. Stir in Italian seasoning and parsley. Add broth and potatoes. Bring to a boil, cover and simmer until potatoes are tender, about 10-12 minutes.
In a separate small pan, melt the remainder of the butter and stir in flour. Add the milk, stirring until smooth. Gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil. Serve!

I made this recipe exactly as printed; it was NOT good. I don’t know if there is a mistake in the ingredients or what the problem is, but the italian seasoning threw the taste way off. This was a total waste of time and ingredients!
