A variation of a traditional hash using linguica, a Portuguese sausage.
Peel and dice the potatoes and linguica into a quarter inch dice. Dice onion and pepper.
In a large skillet add potatoes and linguica in enough water to cover. Bring to a boil and cook until potatoes are fork tender. Drain and add back to skillet with olive oil, onions and peppers. Cook over medium heat, letting the hash get nicely browned and veggies tender. Season with salt and pepper to taste.

I microwaved the potatoes then added it to the pan with the other ingredients. Would add a some cayenne next time to give it a bit of heat.
