Wonderful melt-in-your-mouth cookie that our family has been making for years. It is a Christmas staple in our house.
Use butter that is at room temperature in order for this to go quickly and easily.
Beat butter until light and add remaining ingredients one at a time, beating well after each addition, i.e. beat butter, add cornstarch, beat until blended, add icing sugar, beat again, etc.
Roll into small balls and flatten with a fork. You can garnish the balls with a small piece of candied cherry, or other topping like sprinkles.
Bake at 300 degrees F for 30 minutes.
Makes about 3 dozen depending on the size of your cookies.

it is definitely a melt in your mouth version of shortbread! it never last very long after it is made because my husband and son make very short work of them!
