Notchers is a delicious and super easy-to-make moist coffee cake to be shared with sweethearts.
Mix the brown sugar, flour and butter together until crumbly. Set aside 1 1/2 cups for the topping.
To the remaining mixture, add the eggs, buttermilk and baking soda.
(NOTE: If you do not have buttermilk, just add 2 tbsps of vinegar to regular milk and use that.)
Pour the batter into an ungreased 9 x 13 inch pan (or 3 small round cake pans). Sprinkle the reserved crumble topping on the batter, then sprinkle cinnamon until the topping is covered. (I just estimated that it would be about 3 tbsp of cinnamon… I’ve never actually measured that part.) Dot with a couple thin slices of butter.
Bake uncovered at 350 degrees for 30 minutes.

I baked this just last week for a quick cinnamon fix. This recipe was so quick to make! It is delicious. Next time, i’m planning on drizzling a powdered sugar glaze over it after it comes out of the oven.

Yum! I browsed all of the coffee cake recipes on the TK site and decided on yours (I think it’s because you used the word “Swedish” in your title and I dated a Swedish exchange student in high school, have traveled there, ah young love). Regardless, I tried it today and it’s GREAT! I cut the recipe in half and used a 9×9 pan.. baked it for 20 minutes. My husband (who’s not Swedish) will love it!

Delicious! I made this recipe this past weekend for my Husband’s birthday brunch and this was totally amazing! Everyone was blown away & my two year old can’t stop asking for “mommy’s cinnamon cake.” Welcome to our recipe rotation, Notchers!

Oh my! The Swedes can bake! This recipe was so very simple…basic ingredients and very easy to put together. The finished cake is just perfect. It’s moist and cinnamon-y with a nice crunch to the topping. Thank you SO much for posting this Jenna!
Next time I make this, I am going to mix 2 T. of cinnamon into the crumble mix so that it can disperse throughout the cake and topping. I will also skip the dotting with butter, as there is already plenty of yummy butter clumps in the topping anyway.
It would be fun to play around with different toppings and flavors: blueberry, apple cinnamon, etc.
