A comfort meal for one, or a midnight snack for two.
Stir the flour, salt, sugar, and baking powder together in a small bowl. Make a well in the middle and add the milk, egg white, and oil. Mix gently until mixture is no longer lumpy.
Melt a dab of butter in the frying pan on the stove. Pour the batter into one big pancake, or make two smaller cakes if you prefer. Chocolate chips can be added. Let it fry until bubbles in the centre start to pop, then flip the cake and fry for another minute. Serve with syrup and coffee!

We used to make this all time – but with more butter!
I would squeeze lemon juice over the top as soon as it came out of the oven and dust with powdered sugar.(didn’t use choc chips) Wonderful with a little apricot jam or syrup! Thanks for reminding me of this!

I make pancakes for my boys like this all the time (chocolate chip especially)! Much faster than standing there making batch after batch of small ones. A tip: I found that cutting them with a pizza wheel-type cutter really works great as well!
