I know it sounds like an odd combo, but trust me, you’ll love it!
Heat a nonstick frying pan on medium heat.
Whisk together egg whites and whole egg. Pour into the pan. Once omelet starts to set (is done around the edges and bubbling slightly in the center), place apple slices in a line in the center of the omelet. Sprinkle apples with cheese and jalapeno. Fold over sides of the omelet so it kind of looks like a burrito. After 1 minute, carefully flip and continue to cook for 1 more minute. Remove from the pan, garnish with any remaining cheese, apple slices, and jalapenos (if you have any left)!
You do not have to use the egg combo that I do. You can use 2-3 whole eggs, 4-5 egg whites, or egg substitute. I just happen to love the 3:1 texture and color!

You know, if you really think about it, it is not that odd. I eat green apples with cheddar cheese on top as a post run snack and it is delicious. I ma going to have to try this! May make my boring breakfast more interesting. Thanks for sharing!
