If you haven’t tried this delicious ancient grain, it’s time! It is a high protein, low glycemic grain. It packs 6 grams of protein and 4 grams of fiber per 1/2 cup serving. This salad makes for a beautiful presentation. Be the first to serve this different and delicious salad at your next party!
1. Cook quinoa according to package instructions and cool in a large bowl.
2. Add the remaining salad ingredients. Whisk dressing ingredients in a small bowl. Pour over salad, mix well. Refrigerate.
