Can’t wait to try it with blueberries and maybe add some pumpkin seeds. A great basic recipe that you can add whatever you want to it!

This has become a new breakfast favorite at our house, and I love that I can make it relatively quickly and get several good breakfasts out of it during the week.
Personally, I didn’t find it too salty. We’ve eaten this with fresh fruit as a side, but it would probably be quite good with apples and/or raisins baked into it. I would guess anything that tastes good as part of an oatmeal cookie would work.

Tasty and the proportions are good for consistency. A little too salty and I had already decreased the salt to 3/4 tsp. My husband thought it was bland, but he has poor taste buds. He wanted more cinnamon.
We added two apples cut up and I would not make this without some fruit in it. I think its better with the apple, but maybe it is a 5/5 recipe without it, depends on your tastes.

Made this recipe this morning and it was a HUGE hit!! I lightened it up a little (used egg whites instead of the eggs, smart balance light instead of butter and replaced half the brown sugar with Splenda) and it was still FANTASTIC!
My son said it was the best breakfast he’s had in a long time, and you cannot beat how easy it is to throw together. It really is like eating a big soft Oatmeal Cookie – just delicious and sticks to your ribs!

I had some trouble with the milky mixture settling to the bottom and the oatmeal rising to the top. Any idea what I did wrong? The top layer is delicious! I’d just like to get it consistent next time.

I have a recipe similar to this and when the oatmeal comes out of the oven I drizzle maple syrup over the top – YUM!
