Boiled eggs baked in cheese sauce. Originally made for guests at her parents’ bed and breakfast, my roomate in college made these for the late night partygoers coming home and wanting something good. Our house was always packed! Now I make them for my family and they always clean the pan! These are really good with bacon and buttered toast.
Place egg halves yolk side up in a buttered 9×13 pan.
In a sauce pan, melt butter over low heat. Blend in flour and cook 1 minute. Gradually add milk, cook over medium heat until thick, stirring constantly. Add salt and pepper and cheese and stir until cheese melts and mixture is smooth. Pour all of the mixture over the eggs in the pan. Bake at 350 degrees for 10-15 minutes. Good served over buttered toast points.
