Freaking amazing. I got this recipe from “The Clayton’s Blog” and it is absolutely genius. It has only a few ingredients and is super easy. Can be easily doubled.
Heat oil and butter in heavy based pan.
Add the leeks and cook on a low heat until translucent.
Add garlic. Stir.
Add the potatoes and allow to soak up some of the oil and then add the stock.
Bring to the boil and then simmer for 30 minutes or until the potatoes are butter soft.
Whiz with a hand held blender whilst still in the pot and then season to taste with salt and pepper.
That is it! Serve and enjoy!
