A family recipe usually made at Christmas time. These are so delicious, they melt in your mouth. Delicate, buttery sugar cookies with a tinted powdered sugar filling.
Cream the 1 cup of butter, whipping cream and flour. Chill for 1 hour.
Preheat oven to 375.
Roll dough to about 1/8″ thick. Cut out cookies with a small round cutter. Transfer to waxed paper and sprinkle each with sugar. Coat both sides with the sugar. Prick each cookie with fork four times. Bake 7-9 minutes. Cool.
For filling mix 1/4 cup butter, powdered sugar, and vanilla. Add desired food coloring – whatever color you desire. Spread filling on the bottom of one cookie and top with another cookie to make a sandwich.

I LOVE Cream Wafers. You are right they melt in your mouth.
If there are only a few on a cookie tray, recipients will fight over them.
