Description

Two peanut butter oatmeal cookies sandwiched together with a peanut butter frosting

Ingredients

  • 3 cups Oatmeal
  • 1 cup Flour
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 cup Brown Sugar
  • ½ cups Sugar
  • ½ cups Shortening
  • ¼ cups Peanut Butter
  • 1 whole Egg
  • ¼ cups Water
  • 1 Tablespoon Vanilla

  • FOR THE FILLING:
  • 4 cups Powdered Sugar
  • ¼ cups Peanut Butter
  • ⅓ cups Butter
  • ¼ cups Milk

Preparation

Heat oven to 350 degrees. In a bowl, whisk all the dry ingredients (oatmeal, flour, baking soda, salt, brown sugar, sugar).

In a mixer, beat the shortening, peanut butter, egg and water. Add the dry ingredients and mix well. Scoop onto a cookie sheet with a cookie scoop. Flatten with a glass. Bake for 10 minutes. Remove to cookie racks to cool.

For the filling:

Beat the powdered sugar, peanut butter and butter, drizzling in enough milk to make a good frosting/filling. Sorry, I don’t ever remember to measure this part. Spread on a cooled cookie, top with another cookie, and say WHOOPIE!
