This thick and hearty soup is just the thing for any impending illness! It is easy to make, easy to eat, and wholesome to boot. The traditional Greek recipe has a strong lemon flavor; if you are iffy about this, feel free to cut the amount of lemon juice in half.
Bring the chicken broth to a boil. Add orzo and chicken and reduce heat to low, simmering for about 15 minutes.
Meanwhile, beat the eggs until they are frothy and beginning to get thick. Add the lemon juice to the eggs and beat until it is well-incorporated.
Temper the egg mixture by adding 1/4 cup of the hot broth while whisking. Slowly pour the tempered eggs into the broth, whisking constantly. Remove from heat, add salt and pepper to taste, and serve hot.
