Description

These healthy cookies are a great way to use up leftover oatmeal and overripe bananas. If you like peanut butter and banana sandwiches, you’ll love these!

Ingredients

  • 1 cup Cooked Oatmeal
  • 1 whole Overripe Banana, Mashed
  • 1 whole Egg
  • ¼ cups Peanut Butter
  • 2 Tablespoons Honey
  • 1 cup Whole Wheat Flour
  • 1 teaspoon Baking Powder
  • ¾ cups Chopped Dates

Preparation

In a large bowl, combine oatmeal, banana, egg, peanut butter and honey. In another bowl, combine flour, baking powder and dates. Add to wet ingredients and mix well. Drop spoonfuls onto a greased cookie sheet and bake at 350F for 12-15 minutes.

I just ran it through a recipe analysis and there are about 70 calories per cookie if you make a batch of 24.
I can’t quite remember how many cookies this recipe makes, I just guessed 24 but I might be wrong.

We just made these for breakfast and used raisins… and it was great! I do wish I knew how many calories was in each and how many was a serving.. anyone know!?!?

These sounds so wonderful! I often make peanut butter and banana protein shakes in the morning, so this would be a great alternative while still keeping with my favorite flavor combination. I think I’ll make these tomorrow morning and throw a little protein powder in to the mix. Can’t wait to try them… thanks so much!

Hi! Do you think raisins would be just as good as dates? I don’t keep dates on hand but I have plenty of raisins. I love that these use only whole wheat flour…so many recipes call for some white flour and I always feel like the white flour cancels out the healthfulness of the whole wheat! Thanks for posting this recipe!

These were easy to whip up, but were pretty bland to me. They didn’t seem to have much taste. Maybe next time i might try adding some cinnamon or vanilla or, as Laura mentioned, sprinkling some sugar on top.

I sprinkled a little raw sugar on top before baking and am glad I did – it added a little crunch and sweetness. And instead of dates I used dried plums. These are a yummy, healthy treat!

These were delicious! My only advice would be if you are using fresh dates (I used Medjool dates), cut them up and add them individually to the dry mix to prevent clumping. These are phenomenal out of the oven and super simple ingredients. A perfect use for the extra oatmeal we have every weekend!
