I love quiche, but I didn’t have a premade pie crust and I wasn’t in the mood to make one when the cravings hit. I love savory dishes and this definately fits the bill! When I make this, I usually pair it with my blueberry muffin cake and fresh strawberries.
Peel and slice onions into rings. Place a skillet over medium heat and melt the butter. Add onion and saute until softened and turning translucent (about ten minutes). Remove from heat.
If using uncooked bacon- dice bacon strips and place in a small skillet over medium heat. Cook and stir bacon until it’s nice and crispy (don’t worry if you overcook, they will soften in the oven). Remove from heat. Using a slotted spoon, remove bacon from grease and place on paper towels to drain.
In a medium mixing bowl, whisk the eggs. Next, add milk, salt, pepper, and rosemary. Whisk until everything is combined.
Spray a 1 1/2 quart baking dish with cooking spray. Place the onions in the bottom, followed by the bacon. Next, add the cheese. Pour the egg mixture on top of everything. Bake in a 375 degree oven for 30-40 minutes or until a knife inserted in the middle comes out clean. Serve hot.
*I have used a variety of different cheeses for this dish and I haven’t found one yet that I didn’t like. You can also replace the bacon with 1/2 cup diced ham.
