I found a picture of these online and knew I could recreate them for an upcoming “Under The Sea” party my niece was having. This is also a fun “get the kids in the kitchen” project.
First, color your icing to a slightly pink color. Spread on one cookie, place a yogurt covered raisin on the edge and top with another cookie.
Doesn’t get much easier than that!
Tips:
I wanted to use madeline cookies but couldn’t find them and didn’t have time to make them. They tend to have more of that ‘shell’ look, but as you can see the shortbread cookies I found worked just fine.
Also, I didn’t use yogurt covered raisins because I know not all kids like that. So I found a small bag of white chocolate covered pretzel balls and used those.
Some of the cookies had a hard time “adhering” to each other, so I just dabbed a little frosting on the edge of the top cookie that would be touching the bottom.
