Chewy, gooey pancakes – similar to crepes – only better. And with a secret ingredient.
Note: you must have some ready to use sourdough starter in order to complete this recipe.
Sourdough starter is the secret ingredient that gives these pancakes that unique chewy, gooey flavor. If you don’t have a sourdough starter – start one today, you won’t be sorry once you find out all the super yummy things you can bake with it.
*To get more flavor out of your 49ers you can mix the batter the night before. Unlike traditional pancakes, the sourdough flavor will deepen as it sits.
Heat a large skillet on medium to medium-high heat.
Beat eggs, then add all the other ingredients except for the flour and butter.
Add flour and mix well, although there may still be lumps. Then add in the melted butter and the mixture should become smooth as you beat it. (Adding the butter last helps)
To cook, add plenty of butter in your skillet and dump in 1/4 cup of batter. Hold the pan above the stove and turn it sideways and in a circular motion so that the batter rolls, spreads out, and covers most of the pan’s surface.
Cook for approximately 2-3 minutes, then flip, cooking the other side for another minute.
Set aside and repeat with the rest of the batter.
To keep warm, stick in a 200 degree F oven, or reheat before serving.
Then serve with lots of warm maple syrup. Don’t blame me when there aren’t any left-overs!
