Chunks of pecans and vanilla chip morsels make these oatmeal cookies just wonderful. You won’t be able to eat just one.
Whisk flour, oats, cinnamon, baking soda and salt.
In a large bowl, combine brown sugar, egg, vanilla, applesauce and oil (I filled the measuring cup with almost all of the applesauce, but left enough room for the oil).
Add the dry mixture to the wet mixture and mix until combined.
Fold in pecans and vanilla chips.
Drop spoonfuls of cookie dough onto parchment-paper-lined baking sheets.
Transfer to the oven and bake for 15 minutes.
Remove and place on cooling racks.
