Description

Potato soup with chunks of kielbasa and cheese. I’m estimating four servings since my family of four can go through a whole pot. I always double the recipe.

Ingredients

  • 4 whole Potatoes, Cubed
  • 1 whole Small Onion, Chopped
  • 1 stalk Celery, Chopped
  • 1 can Beef Broth
  • 1 can Chicken Broth
  • 1 cup Water
  • 1 package Kielbasa Sausage, Cut Into Chunks
  • 1 can Cream Of Chicken Soup

Preparation

In a large pot over medium heat, combine potatoes, onion, celery, beef broth, chicken broth, and water. Bring to a boil, then reduce heat and simmer until potatoes are tender, 15 minutes.

Stir in sausage and condensed soup and continue to simmer until heated though and slightly thickened.

Season with pepper. Top with shredded cheese.

I browned the sausage first, and added a smidge of Wondra to thicken it up. Oh my goodness, this is a delicious recipe!

A friend who was a chef at a local diner used to make a chowder like this and it was sooo good. Thank you for sharing your recipe, I can’t wait to make it, and then devour it!

The flavor of this soup is very good! I did brown the sausage first, then remove it from the pot, and add the onion, celery and carrots (the last my own addition). While they cooked a bit, I peeled and diced the potatoes. From there, I followed the directions. I like that it’s not so very creamy that it’s too heavy. It’s a good consistency, I think, and as I said, the flavor is outstanding!
