Description

Cowboy Cookies – A roundup of ingredients!

Ingredients

  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Baking Powder
  • 1 cup Butter, Softened
  • ¾ cups Sugar
  • ¾ cups Brown Sugar
  • ¼ cups Apple Sauce
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • 1-½ cup Oats
  • ½ cups Raisins
  • 1 cup Chocolate Chips
  • ¾ cups Pecans, Or Other Nuts
  • ½ cups Coconut

Preparation

Preheat oven to 350 degrees.

Spray cookie sheet with cooking spray, lined with parchment or baking sheet.

Sift flour, baking soda and baking powder into a medium bowl.

Beat butter and sugars with a mixer on medium-high until pale and creamy. Add Apple Sauce.

Reduce speed to medium and add eggs, 1 at a time, beating well after each addition. Beat in vanilla.

Reduce speed to low, and slowly add flour mixture, beating until just incorporated. Beat in oats, raisins, chocolate, pecans (or other nuts), and coconut until combined.

Using two spoons, drop dough onto baking sheets, spacing 3 inches apart.

Bake until edges of cookies begin to brown, 11 to 13 minutes.

Transfer cookies to racks. Let cool.

You didn’t mention how much salt to use. I’m going to take a guess that it’s 1 teaspoon.

This is very very good. They came out crispy yet soft in the center. Very addictive!
Some modifications: I use 1/8 cup of melted butter, because I don’t have applesauce. And I added about 1/2 cup of dried apricots.

Such a better name for these cookies! We always called them “Kitchen Sink” cookies, cause you could add everything, but the kitchen sink, and they always turned out great. I’m so changing the name on to Cowboy Cookies in my recipe book. Lots more appetizing!

These were very good. I did try to make them a bit healthier, but won’t go into that. My family really enjoyed all the different tastes and textures in these!
