These pancakes will melt in your mouth. They’re based on Bisquick’s melt-in-your mouth pancakes, but my husband loves amaretto, so I experimented and came up with these. Light and fluffy and oh, so good!
Heat griddle or skillet while mixing the above ingredients. Melt a couple of pats of butter on the griddle and pour out pancakes, about 1/4 cup of batter for each pancake. Cook until bubbly, a little dry around the edges, and lightly browned on the bottom. Turn and brown the other side.
My kiddos love these topped with whipped cream and berries. I prefer them with warm maple syrup and a side of artery-clogging breakfast meat.
For a Bisquick substitute (1 cup), mix:
1 cup flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon Crisco

These are delicious! I made them tonight (breakfast for dinner, yum!) and it won’t be the last time. Thanks for sharing this easy and wonderful recipe!
