I love a savory breakfast and ricotta cheese, so this is one of my go-to breakfasts. It’s easy to adapt to your own tastes!
Preheat and lightly grease a large skillet or griddle.
Mix the dry ingredients together in a bowl. Add the milk and 3/4 cup of the ricotta cheese until slightly lumpy.
Drop 1/4 cup of the batter onto the cooking surface, spreading it lightly with the bottom of the measuring cup. Cook until lightly browned on both sides, about 1-2 minutes per side.
Use the remaining ricotta cheese to top each pancake. Recipe will yield 4 stacks of 2 pancakes each.

These were very easy! I whipped up half a recipe for my breakfast (w/ one leftover pancake) in no time. I ate mine the sweet way – with ginger syrup. While these were easy, they were also pretty general flavor-wise, which you might like or find boring.
