Eggs baked in seasoned potato skins.
Cut off a portion of each baked potato, so that once you scoop out the middles, you will have a nice “potato bowl.” Add 1/2 tablespoon of butter to the bottom of each “bowl.” Gently crack an egg into each potato bowl and top with the chopped bacon, seasonings, cheese and remaining 1/2 tablespoon of butter.
Bake at 350F for 20-25 minutes. Enjoy!
