Description

Extra rich and fudgy. Enjoy!

Ingredients

  • 5 ounces, weight Semisweet Chocolate
  • 3 ounces, weight Unsweetened Chocolate
  • 6 Tablespoons Butter, Softened
  • ⅓ cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • ⅛ teaspoons Salt
  • 2 whole Eggs, Room Temperature
  • 1 Tablespoon Vanilla Extract
  • ¾ cups Granulated Sugar
  • 1 cup Semisweet Chocolate Chips

Preparation

Preheat oven to 325ºF. Grease cookie sheets.

In small saucepan, over low heat, melt the chocolates and butter. Set aside to cool.

Sift together the flour, baking powder and salt. Set aside.

In large mixing bowl, beat the eggs and vanilla extract until smooth. Add the sugar and blend until thickened. Add the melted chocolate. Reduce the mixer speed to low and add the flour mixture. Mix just until combined. Fold in the chocolate chips.

Drop by tablespoonfuls, 3-inches apart, onto prepared sheets. Bake 13 minutes or until they rise slightly and form a thin crust. Remove immediately from sheets to wire racks to cool completely. Makes about 18-20 cookies.

These cookies taste wonderful, but my only issue was they crumbled easily when I took them off the cookie sheet. I got 18 cookies out of the batch, but half were destroyed into mounds…but still tasted great.

These cookies have become a regular at our house. I use gluten free flour instead of regular flour and they turn out great. I am always surprised at how watery the dough is but it all works out. Be careful not to over bake -take them out before the tops begin to crack -or they will become very hard.
