These cookies were developed out of desperation—I needed to find a breakfast that my four-year-old would eat in less than 20 minutes. They are made with healthy, simple ingredients and easy to make. Best of all, eating breakfast before school is now a much faster process!
Preheat the oven to 350˚F. Line two baking sheets with parchment paper.
Combine the dry ingredients: whole oats, whole wheat flour, baking powder, baking soda and salt. Set aside.
In a mixing bowl, combine the wet ingredients: brown sugar, maple syrup, melted butter, vanilla extract and molasses. Beat for 1-2 minutes or until well combined. Slowly add in the dry ingredients. Mix until well combined. Add in the chocolate chips, dried fruit and nuts.
Roll into 1″ sized balls. Place 2″ apart on the parchment-lined baking sheets. Bake for 10 minutes, or until golden brown.

I have been working on a breakfast cookie recipe of my own because I couldn’t find any that looked good. I am definitely going to try this out!

These are awesome
– I have looked at loads of cookie/cake bar recipes and this one jumped out at me. Perhaps because I have 2 almost 4yr olds that can make breakfast last until lunch!.
They are easy to make and full of good things. Everyone in our house loved them – so a huge thank you from me ;0)
