Pancake tradition prior to or after opening gifts on Christmas morning.
Mix buttermilk and oatmeal, cover and refrigerate overnight.
Before cooking, stir in eggs and butter. Stir in raisins. Add all dry ingredients.
Let stand 20 minutes before cooking. Use about 1/4 cup batter for each cake and cook. If your batter is too thick, you can thin with up to 3 Tablespoons buttermilk.
My notes: I usually mix up all the dry ingredients the night before. That way, all I have to do is throw it in with the wet. I am not in the kitchen measuring and making a mess while my family eagerly awaits the gift opening.

These are so good! They make alot too, I always make 2 batches and serve some for breakfast and make and freeze the rest. They are awesome for pulling out and sticking in the toaster on a busy morning.
We leave out the raisins as my kids aren’t raisin fans but I don’t think it’s missing anything without them.

These are stick to your ribs good. I like them with an over easy egg tucked between them. Let the yolk run over the pancakes, it’s so good. The family loves these pancakes. I also found them on allrecipes.com.

These are fantastic! They are robust, tasty pancakes. I have 4 boys that are big football players. Their friends love to come by and have these for brunch on Sunday. Thanks for this!!!

These are our Christmas pancakes. We have them every Christmas morning. I think this recipe is Bed & Breakfast worthy. Any Bed & Breakfast guest would love these. They are so good!
