A great way to stretch out your eggs if you’re running a bit low, and the kids absolutely love these.
This recipe is easily adjustable. Just make the amount of scrambled eggs your family eats, and work the remaining ingredients around it. This recipe will feed 5 of my hungry kids, plus me. Exchange the Alphabet pasta for Orzo, for a more grownup appearance.
In a large pot of salted water, cook the pasta according to directions, following the shorter amount of time as the pasta will cook just a little more later on. Drain.
In a large bowl, combine the eggs, milk, salt and pepper, and whisk to combine.
Cook the bacon in a large non-stick frying pan over medium heat until crispy. Drain off most of the fat, but do not clean the pan.
Melt the butter in the pan and saute the onions over medium heat until translucent. Add the cooked pasta and toss with the butter and onions. Add in the eggs, and cook for several minutes until set, stirring regularly with a rubber spatula.
Serve on small tortillas, garnished with the bacon and cheddar cheese.
