This is a very good recipe if you are trying to stretch eggs for dietary or budgetary reasons. A great way to use up leftover rice, too. Good for breakfast, lunch or dinner.
1. Lightly beat 2 eggs. Gently mix in 1 cup of cooked rice (leftover rice works great, can be white or brown).
2. Tear ham slices into small pieces and heat in a frying pan over medium-high heat until they begin to brown. Pour in the eggs/rice mixture and scramble until the egg is cooked through.
3. Turn out onto a serving dish. Sprinkle with salt, pepper and parsley (or other herbs/spices) to taste.
This recipe can easily be adapted to use other meats, such as bacon or sausage. Also try omitting meat and adding cooked veggies for a nice vegetarian meal.

Sometimes I make this and add canned diced tomatoes and maybe a little cumin for a little mexican flare in the morning! And I always have leftover rice so I make this all the time!

Had these Sunday morning! Very good, too, but I added a little leftover chopped onion and bell pepper to the diced ham, then added the cold rice and heated it up before pouring the eggs in. Great way to stretch a protein, and good re-heated, too!
