A buttery, melt in your mouth cookie. My mum made these cookies every Christmas and I’ve carried on the tradition.
Put all ingredients into a bowl and work with fingers until a smooth dough forms. Shape into 1-inch balls and place on an ungreased cookie sheet.
Flatten slightly with the palm of your hand until round in shape. Bake in a 300-degree oven for about 20-25 minutes, or until the bottom of the cookie is light golden brown.
Note: dough can be chilled in the fridge for easier handling if desired.
