Don’t let the title fool you! There is no bread here, only cookies. Delicious, medium-sized chocolate cookies help me through those times when I need a chocolate fix. Tastes great with tea, coffee or just plain milk.
These cookies are a familiar sight at the Swedish “fika time” which is the daily coffee break. My grandmother always has these on hand. If you cannot find pearl sugar, you can use regular sugar or sprinkles.
Set the butter out in advance to let it soften.
Turn your oven on to 350 F.
Place all of the ingredients (except the pearl sugar and half of the beaten egg) in a bowl. Mix until everything starts to come together like a pie dough. You can mix using the same technique you use for pie dough. I use the dough hook attachment to my handheld electric mixer.
Take half of the dough and form into a ball shape. Using your hands, roll the ball into a long cylinder (I do this on a clean counter or sometimes parchment paper. You can also use a dough/pie mat.) When your cylinder is about an inch and a half thick, place it on a baking sheet covered with parchment paper. Use your fingers to flatten the dough down.
Now, do the same thing to the other half of the dough.
Take the second half of the beaten egg, and use a brush to coat the cookies lightly. Sprinkle the cookies with pearl sugar, sugar or sprinkles.
Bake for 10-12 minutes.
While the cookies are still warm, cut them into 1-inch thick slices at an angle.
