I found this on a blog when I was craving root beer floats, but wanted to make root beer in the ice cream. It is crystally/sherbet-y in texture, which matches what root beer does to ice cream in a float. It’s delicious and such a light airy dessert! Warning: for those of you who love root beer, it’s addictive!
In a bowl, stir root beer a bit to get rid of carbonation.
Add sweetened condensed milk and milk (you can use 1%, 2% or whole) and whisk well.
Pour into an ice cream maker and make according to your ice cream maker’s directions (mine is a 1.5-qt machine and takes 20-25 minutes to make).
Freeze this for a couple of hours before serving so it can harden even further.

Bookmarked! Looks terrific. One quick question: have you tried to make this with diet root beer? I know fiddling with the sugar content can compromise the texture, but it would be great to make this lower calorie if possible. Maybe with a little xanthan gum or something to help smooth it out.
