Description

A reason to wake up in the morning! Tart lemon bread toasted and spread with cream cheese and topped with sweet, juicy wild blueberries.

Ingredients

  • 2 slices Lemon Flavored Bread (I Used Slices From My Lemon Tea Bread Recipe)
  • 1 whole Egg
  • ¼ cups Milk
  • 1 Tablespoon Butter/margarine
  • ½ cups Wild Blueberries (I Used Frozen Berries And Warmed Them Up In The Microwave—Thanks, Trader Joe's)
  • 2 Tablespoons Plain Cream Cheese, Softened, Or More If You Like It Spread Thick

Preparation

1. Beat egg and milk together in a bowl.
2. Heat butter in a skillet on medium heat.
3. Dredge the two pieces of bread in the egg mixture and place in the skillet.
4. Cook French toast and flip to turn golden brown on both sides.
5. When toasted, plate and spread one side of each piece with cream cheese and sandwich together.
6. Top with warm blueberries, letting the juice soak into the toast. Mmm.
7. Take a step back to admire and take pictures to post on TK!
8. Devour.

Husband said he really ought to marry me for this. (Thought about pointing out it’s too late – I’m already hitched). Kid was satisfied (although he’s satisfied with the fact mommy got up to make breakfast). I was slightly disappointed with the crumbliness of the lemon tea bread as it became french toast. Being the sacrificial mom I am, I took the crumbliest bits. I also didn’t have wild blueberries so the commercial kinds had to suffice, and I cooked them up into a sauce. A little powdered sugar on top and what a beautiful presentation!
