Delicious, healthy and even my kids love it!
Heat oil in a large skillet over medium-high heat. Saute onions and carrot in oil for 3-5 minutes. Add lentils and spices. Stir to coat. Add broth and tomatoes. Bring to a boil. Reduce heat and simmer for 40-45 minutes. Serve over basmati rice.
Yields 4 servings.
