Description

My favourite crustless quiche for its incredible tastiness and crazy-easy recipe! Gluten-free.

Ingredients

  • 200 grams Shoulder Bacon, Sliced Into Thin Strips
  • 3 cloves Garlic, Finely Chopped
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Mixed Herbs
  • 1 head (small) Broccoli, Diced Small
  • 8  Eggs
  • ⅓ cups Mascarpone Cheese
  • ¼ cups Feta Cheese, Diced Small

Preparation

Preheat oven to 150°C (300°F) and grease quiche dish or a square baking dish with butter.

Fry bacon until just cooked. Add garlic, garlic powder and mixed herbs and fry for about 3 minutes.

Throw in broccoli and fry for 4 minutes, or until broccoli is bright green, stirring often. Pour bacon and broccoli mixture into prepared baking dish.

Whisk eggs, then add mascarpone and whisk to incorporate. Don’t worry if small lumps of mascarpone remain. Pour egg mixture over bacon and broccoli, then arrange feta cheese on top and bake for 40–45 minutes or until quiche is golden and cooked through in the centre.

Notes:
• This quiche will serve 2 to 3 as a main dish with a salad, or 6 to 9 as an additional dish in a buffet meal.
• Make this into a vegetable quiche by leaving out the bacon and adding small cubes of pumpkin or butternut squash. Kale or spinach would work well too.
• You can use ham instead of bacon if you prefer. There would be no need to fry the ham, so fry the garlic in a little olive oil, then add the broccoli as above. Stir ham strips into the broccoli and garlic mixture before spooning into the baking dish.
