This soup is as easy as opening a couple of cans! And it tastes like you slaved over it all day. It has slightly spicy Mexican flavors and does not taste like chili. Do try and find chipotle or roasted salsa; the smoky taste really gives this soup depth. I like to mix this soup up the day before and then heat and serve it.
In a large saucepan combine all ingredients except 3/4 cup of the pico de gallo. Blend with a hand blender until smooth and creamy, or just partially blend and leave some bean chunks. Add remaining pico de gallo and heat soup until simmering. Simmer for a few minutes and then serve with some fresh cilantro or with a dollop of sour cream.
Alternately, blend the ingredients in a stand blender or food processor in batches, then heat on the stovetop.
