Slice the onions thinly and saute in the olive oil. Cook slowly in a covered pot over low heat for 30 minutes. If necessary, add a little water to avoid burning. Add broth and season to taste with salt and pepper. Toast bread and place slices in soup bowls. Top with Carabaccia, sprinkle with Parmesan cheese.

This sounds delicious, I am not familar with Carabaccia, is it a cheese? Its not listed in the ingredients but mentioned in the paragraph.
