Veggie fried rice is easy to make and naturally gluten-free. Beware of soy sauce, as most brands contain wheat.
In a large skillet, bring oil to a sizzle. Sauté onions, carrots, peas, and garlic. Add rice and soy sauce. Mix well and move mixture to one side of skillet.
Crack egg over the other side of the skillet and scramble. Combine egg and rice mixture. Enjoy!
