Description

Vegan cooking is all about flavoring and using the right herbs and spices. This easy and healthy veggie quiche is flavorful and filling, the perfect brunch food. The hearty veggies—Brussels sprouts, red bell pepper and asparagus—are balanced by the chopped basil, diced tomatoes and green onions. It is so delicious!

Ingredients

  • 1 package (about 12 Oz. Size) Extra Firm Tofu
  • 1 dash Milk
  • 1 teaspoon Liquid Amino's Or Soy Sauce
  • ¼ teaspoons Turmeric
  • 1 teaspoon Cumin
  • 2 Tablespoons Nutrional Yeast
  • Salt And Pepper, to taste
  • 1 Tablespoon Olive Oil
  • 5 cloves Garlic, Minced
  • 2 cups Chopped Brussels Sprouts
  • ⅓ cups Chopped Asparagus
  • 1  Red Bell Pepper, Diced
  • 1  Tomato, Diced
  • 1 bunch Green Onions, diced
  • 2 Tablespoons Chopped Basil

Preparation

Preheat oven to 375ºF.

Blend tofu with a splash of milk, liquid aminos, turmeric, cumin, nutrional yeast, salt and pepper until smooth and creamy.

In a saute pan, heat olive oil and add all the veggies. Once the veggies are soft, combine with the tofu mixture.

Grease a cupcake pan with olive oil. Add mixture to the pan. Bake for 30 minutes or until done.

Let cool and enjoy!
