Chewy, moist, full of flavor and relatively low-cal!
Cream applesauce and sugars together. Add egg, vanilla and cinnamon. Sift flour and stir in, along with the oats.
Mix well, then add nuts and fruit. Batter should be rather thick and sticky.
Drop by the spoonful onto a greased baking sheet and bake at 350°F for 15 – 20 minutes, depending on the size of the cookies. Do not overbake! Cookies should be still be soft when you remove them from the oven, but they’ll set.
Depending on size, this makes about 20 – 25 servings.
