An irresistibly delicious, 20-minute healthy, homemade Sugar Free Strawberry Chia Seed Jam!
In a large saucepan over a medium high heat, stir strawberries, lemon juice, cornstarch and salt, stirring until cornstarch dissolves. Bring to the boil, stirring constantly. Stir in water, cover and simmer on a medium low heat for 10 minutes. (If you want a smooth jam, mash strawberries with a potato masher until you are happy with the consistency. If you want a chunky jam, don’t mash them at all.) Simmer uncovered for another 5 minutes or until the mixture is thickening.
Take the jam off the heat and stir in vanilla essence, honey and chia seeds, making sure the seeds are evenly distributed. Let jam cool for 5 minutes and then pour into glass jars with airtight lids.
Store jam in the fridge or freezer.
