Indescribably delicious oatmeal cookie. These have been a favorite cookie of my students for years.
Turn oven to 350 degrees.
Cream shortening and sugars. Beat in eggs and vanilla.
Stir in oatmeal and combined flour, salt, soda, and cinnamon. Stir in coconut and chopped nuts.
I make these into large cookies, using an ice cream scoop, but they can be made any size you prefer…
Bake for 8-10 minutes at 350 degrees F. They will still be soft. Cool on the pan for 2-3 minutes before trying to remove them from the cookie sheet.
Note: I sometimes add chocolate chips to this recipe or dried cherries, cranberries or raisins, but it is almost like gilding the lily, as they are delicious just the way they are. Think of this as a recipe that you can adapt.
