Use storebought roasted chicken (or leftover chicken from a previous meal) to make this quick and easy Malibu Chicken. It works well with thighs, too, and that would increase the fats somewhat. Pairs well with roasted radishes. Multiply servings as needed. Suitable for Atkins, keto, lchf, low carb, diabetic, low glycemic, gluten-free, grain-free.
Mix all of the sauce ingredients in a small dipping bowl, set aside.
Place the chicken on a serving plate, and warm in microwave if not already warm. Top with the ham, folded in half. Top with the cheese slice.
Microwave for about 10 seconds, just until the cheese begins to melt. Garnish with fresh rosemary leaves. Add the dipping sauce to the plate, along with any desired sides.
